Grown on the El Libano farm and produced by Javier Rubio and his brother Hector, both members of Tres Rayas Coffee Cooperative.
Coming from a long family history of coffee growing, Javier spent his early years working in the fields until purchasing a farm of his own - El Libano. There he began experimenting with growing different coffee varieties – including Yellow Bourbon.
The varietal ‘Yellow Bourbon’ is a natural mutation of the Typica variety. The name Bourbon was given after an island now called Reunion, off the coast of Madagascar upon its introduction to South America.
For this microlot, cherries were strictly picked with the same level of ripeness. Exposed toa dry extended anaerobic fermentation of 34 hours and shadow-dried in parabolic beds until the ideal moisture content was achieved.
This coffee is 100% Yellow Bourbon, delivering bright and zesty flavours with notes of Pineapple, Grape & Chamomile perfect for an elegant filter coffee or delicately refined single origin espresso.
